One eyed jack sandwich

Ingredients:

2 slices sourdough bread
1 egg
Pepper Jack cheese (slices)
Butter
Bacon

Method:

In a skillet, fry a couple of slices of bacon until crispy.
Set aside on paper towels to drain.
Drain bacon fat from skillet.
Cut a hole in the center of one piece of bread.
Butter it on both sides and place in the skillet.
Crack the egg into the hole of the bread.
Flip the bread and brown again.
Stack bacon slices and Pepper Jack cheese on top of the bread with the egg in it.
Butter one side of your remaining slice of bread, and place on top of the egg, bacon, and cheese.

Flip and toast until top slice of bread is golden brown.
