Panini

Ingredients:

There is no real recipe for these Italian sandwiches. In essence they are the Italian version of the American grilled cheese sandwich.
One can buy a panini grill on which to grill them but this is not really necessary. Some options are:
1. a Forman grill. This is similar to a panini grill but the grill marks are much closer together and the panini grill gets very hot.
2. a cast iron frying pan and a brick covered with aluminum foil. Get the pan very hot, spray with oil , place the sandwich in the pan and lay the brick on top!
3. a waffle/pancake grill. Same principle as the Forman but gets a bit hotter with no grill marks.
4. Spend about $75 for a panini grill which you will use occasionally.

Method:

How to make a Panini?
Take 2 slices of your favorite substantial bread ( not Wonder white bread ) or a crusty roll.
Spray the outside with olive oil.
Oil side down, place your favorite Italian sandwich fixin?s on the unoiled side of the bread.
Often a semi soft cheese such as mozzarella or Provolone cheese is used. Then a salad green such as endive, arugala or escarole is put on. A slice of Italian meat such as prosciutto, pancetta or Italian salami is put on. You can also put Italian olives, fresh basil leaves, very thinly sliced tomato, thin layer of ricotta cheese but I could go on and on. I think you get the idea. Your favorites from the land of Italy!
Top with the second slice of bread (oiled side up ) and place on the grill for a few minutes on each side.
You will come up with a most delicious sandwich!
