Peach Brandy Pie

Ingredients:

1 pound peaches, peeled and sliced
1/2 cup sugar
1/4 cup brandy
2 tablespoons tapioca (quick-cooking)
1 teaspoon vanilla
1 pie crust (9-inch)
1 cup flour
1/2 cup brown sugar, packed
1/2 nutmeg, ground
1/2 cup butter


Method:

Prepare pie crust from your favorite recipe and place it into a 9-inch pie tin and decorate the edges with twists. Peel and pit the peaches (or you can use a large can of drained peaches). Place
the fresh peaches into a bowl and add the sugar, brandy, vanilla and
tapioca. Let it sit until the tapioca softens. Place the mixture into the pie crust. In another bowl, add the flour, brown sugar, nutmeg and butter. Cut in the butter with a pastry cutter until small pea-sized. Then rub the mixture between your fingers to evenly break up any brown sugar clumps. Take the streusel topping and cover the peach mixture.
Place pie on bottom rack and bake pie in a pre-heated oven at 350
degrees for about 55 minutes or until streusel is golden brown.
