Peach Crisp With Sweet Cream

Ingredients:

6 to 8 large fresh peaches, sliced
1 cup of brown sugar
1 cup of white sugar
1 cup of flour
1 1/2 sticks of butter
1 teaspoon of ground ginger
1 cup of heavy whipping cream
1/4 cup of powdered sugar
1 teaspoon of cinnamon

Method:

In a bowl, combine 1/2 teaspoon of cinnamon, 1/2 teaspoon of ginger, 1/2 cup of white sugar, 2/3 cup of brown sugar, and the flour
Mix together by hand until pea-size crumbles appear
Press half of the flower/sugar mixture into an 8 x 8 greased pan
Toss the peaches in the remaining white and brown sugar and pour over the pressed flour mixture
Crumble the remaining flour mixture on top of the peaches and bake in a 375-degree oven for 15 minutes, or until golden brown
With a mixer, or using a whisk, blend the heavy cream with the powdered sugar, remaining cinnamon, and ginger until soft peaks begin to form
While crisp �is still hot, portion into cups and top with a dollop of the sweetened cream
Recipe serves 6 to 8.
