Peanut butter blueberry roll-up (Diabetic)


1 six-inch whole wheat flour tortilla
2 tablespoons reduced-fat peanut butter
2 tablespoons dried blueberries (dried cherries, dried mixed berries, or raisins
can be used instead of blueberries)


Lay tortilla on a flat surface. Spread peanut butter evenly over the tortilla. Sprinkle dried blueberries over the peanut butter. Starting at one side, roll the tortilla up so the peanut butter and blueberries are inside. Eat right away or wrap in plastic wrap to keep the roll-up fresh.
