Pirate Bean Soup


2 1/2 cups dried pea beans
1 onion, sliced
1 teaspoon bacon fat
1 teaspoon salt
1/8 teaspoon pepper
1/2 cup ketchup
1 tablespoon Angostura


Wash beans thoroughly, cover with cold water and soak overnight. Add water to make about 4 cups and simmer for 1 hour. Saute onion in bacon fat until golden. Add onion, salt and pepper to beans and continue simmering for another 2 hours. Just before removing from heat, add ketchup and Angostura, and stir well.
Makes 6 servings.
