Potato Dumplings


8 medium potatoes, peeled
1 tsp. salt
1/4 tsp. pepper
1 to 1 1/2 cups flour
1 egg
1 pound bacon
4 large chopped onions


Grate potatoes in bowl. Drain as much as you can. Add
balance of ingredients; mix well. In a large pot of boiling
water, drop 1 teaspoonful at a time. Turn heat down. Simmer
slowly until all float. Pour and drain well. Cut bacon small
and saute in skillet until soft; not crisp. Remove. Add
chopped onions and simmer slowly until onions are soft and glazed. Return bacon and add potato dumplings. Mix well. Cover until serving time or make hours before and put in bowl. Reheat in microwave.
