Potato Soup


2 Tablespoons butter
2 Tablespoons onion, finely chopped
2 1/2 teaspoons salt
1/8 teaspoon pepper
1 Tablespoon flour
1 Tablespoon parsley, finely chopped
1/2 cup celery, finely chopped
2 cups potatoes, diced
2 cups water
3 cups milk


Heat butter in 3 quart pan until slightly browned. Add onions, fry slowly until yellow and tender. Then add salt, pepper and flour. Blend well. Add parsley, celery, potatoes and water. Mix thoroughly. Cover. Place over high heat
(about 3 to 5 minutes). Reduce heat to low and cook 15 minutes
until potatoes are tender. Add milk. Heat thoroughly.

Helpful Hints:

Serves 6
Very good with egg noodles. Simply cook some egg noodles
according to package. Drain and add to potato soup.
