Pulled Pork

Ingredients:

Purchase a fresh pork shoulder about 6 to 8 lbs.

Method:

Put the pork into a large kettle with about 2 quarts of water.
Simmer for about 3 hours. Remove from heat and let cool until it can be handled easily.
Place in a roasting pan with about 2 cups of the liquid.
Roast for 15 minutes at 450 F then at 250 F for about 3 hours.
Remove from oven and cool until you can handle it easily.
Remove thick skin and layer of fat and discard.
Pull the pork into strips and place in a container.
Pour your favorite barbecue sauce over the meat and refrigerate. Tastes best when left for a day or two until the flavors meld.
