Makes 4 cups
1 (28 oz) can organic whole tomatoes
1 cup dried non-fat instant milk powder
Freshly ground pepper, to taste
Crumbled feta (optional, for topping)
Add tomatoes, their juices and the dry milk to a blender and purée until smooth.
Heat soup in a pan or microwave. Add a little pepper and serve. If you’d like, crumble
a little feta cheese over on top.
Canned soup is quick and easy, but is often loaded with sodium. This tomato soup
is just as easy, because it takes almost no time to make and can be heated in the
microwave. You can also add extra tang with creamy feta cheese.
