Risotto

Ingredients:

This is made with Arborio rice which is an Italian short grain rice available in most grocery stores now. It is creamy and filled with flavor.

Serves 2-3 people
1 cup Arborio rice
2-3 cups water, broth or bullion
1 clove garlic, minced
? cup wine
? cup parmesan cheese, grated
1 tsp. butter
? tsp. red pepper flakes (optional)
olive oil

Method:

In a heavy saucepan put about 2 tablespoons of oil . Put over heat and add the rice and garlic. Saut? for a few minutes. Add wine and saut? for about 2 minutes. Add liquid ? cup at a time and cook until it evaporates stirring constantly. Keep adding the liquid and stirring for about 25 minutes. Taste to see if the rice is cooked. If it is then take off the heat and stir in the butter and parmesan cheese. Serve immediately.
If it is not done then continue to add liquid and cook until it taste finished.

Helpful Hints:

Cook notes: You may add vegetables such as mushrooms, spinach or broccoli. Do not add starchy veggies such as peas or corn. You can also add cooked meats to this dish.
