Scotch Shortbread Cookies

1 pound butter (no substitutes)
1 cup brown sugar (packed)
5 cups flour
1 teaspoon vanilla


1. Cream butter and brown sugar together until smooth.
2. Add flour a cup at a time until dough is moldable.
3. Add vanilla and work in with your hands.
4. Divide dough in half and form into two long log shaped rolls.
5. Place on cookie sheet or wrap in waxed paper and refrigerate until firm.
6. When you're ready to bake them, preheat oven to 325 degrees.
7. Slice into cookies about 1 quarter inch thick.
8. Place on large cookie sheet or jelly roll pan about a half inch apart.
9. Bake for 20 to 25 minutes or until golden brown.
