Simple and Satisfying Bean Salad

Ingredients:

Makes about 4 cups
1 15 oz can red beans (or any other kind you may like)
1 small onion, diced
2 tomatoes, diced
1/4 cup chopped basil leaves
2 cloves garlic sliced
2 tsp extra-virgin olive oil
2 tbsp red wine vinegar
Red pepper flakes to taste
Salt and pepper to taste

Method:

Combine all ingredients in a medium bowl, cover and refrigerate for about 30 minutes
so the flavors can mesh! Serve and enjoy.

Helpful Hints:

Oftentimes, side dishes with “salad” in the name are full of mayonnaise and other fattening ingredients. This bean salad offers flavor, a little bit of kick thanks to vinegar and red pepper flakes, and zero heaviness. Beans are high in antioxidants, fiber, protein, B vitamins, iron, magnesium, potassium, copper and zinc. Eating beans
regularly may decrease the risk of diabetes, heart disease and colorectal cancer. Plus, beans are budget-conscious, and this salad is no-fuss and filling!
