Spinach Artichoke Tortellini

Ingredients:

• 20 oz. refrigerated or frozen cheese tortellini
• 6 c. fresh spinach
• 1 (14 oz.) can artichoke hearts, chopped
Sauce:
• 4 Tbsp. salted butter
• 1/4 c. flour
• 1 tsp. kosher salt
• 1/4 tsp. pepper
• 4 cloves minced garlic
• 4 c. milk
• 1 c. shredded parmesan cheese
• 1 c. shredded mozzarella cheese

Method:

1. Cook tortellini according to package instructions. Set aside.
2. Prepare sauce by melting butter in a medium saucepan over medium-low heat.
3. Stir in flour, salt, and pepper and cook, stirring, 3-5 minutes.
4. Stir in milk; increase heat to medium and cook, stirring, until thickened and bubbly.
5. Stir in cheeses.
6. *If sauce is too thick, add more milk slowly until desired consistency is reached.
7. Stir in cooked tortellini, fresh spinach, and chopped artichoke hearts.
8. Season with salt and pepper as desired.
