Stuffing Casserole

Ingredients:

4 cups leftover stuffing
1 cup dried cranberries
1 cup pecans, chopped
3/4 cup chicken broth
1 large egg, lightly beaten
2 cups part-skim mozzarella cheese, shredded
1 cup whole-milk ricotta cheese
4 cups turkey, cubed, cooked, and divided
1 cup cheddar cheese, shredded

Method:

Step 1 - Preheat the oven to 350 degrees F.
Step 2 - Grease a 9x13-inch baking dish.
Step 3 - Place the stuffing, the cranberries, and the pecans in a large bowl.
Step 4 - Stir the broth into the stuffing mixture.
Step 5 - In a small bowl, mix the egg, the mozzarella, and the ricotta cheese.
Step 6 - In the prepared baking dish, layer 2 cups of the turkey, 3 cups of the stuffing mixture, and the cheese mixture.
Step 7 - Top the casserole with the remaining turkey and the remaining stuffing mixture.
Step 8 - Sprinkle the cheddar cheese over the casserole.
Step 9 - Cover and bake until heated through, about 40-45 minutes.
Step 10 - Uncover and bake until the cheese is melted, about 5 minutes.
Step 11 - Let stand for 10 minutes.
Step 12 - Serve.
