Sugar Free Catsup (Diabetic)

Ingredients:

5 tomatoes, chopped fine
1/2 tsp red pepper flakes
2 cans tomato sauce
1/2 tsp cayenne pepper
2 to 3 cans tomato paste
1/4 tsp allspice
1 large onion, chopped fine
1/2 tsp cloves
4 cloves garlic, minced
1/2 tsp cinnamon
4-5 tsp olive oil
1/2 tsp celery flakes
2 cups rice syrup
1 tsp Tabasco hot sauce
1 1/2 tsp dry mustard
1 cup cider vinegar
1 1/2 tsp paprika
Salt to taste
1 tsp ginger

Method:

In a large sauce pot or Dutch oven, add onions and garlic, and saute until soft.
Add all other ingredients except vinegar and salt. Reduce heat and cook about 1 1/2 hours until thickened. Add vinegar and salt, cook for another 1/2 hour. Taste and add salt if needed. Put catsup into a food processor or blender and puree until uniform consistency. If mixture looks too thin, simply put it back into pot for an additional 1/2 hour. Cool, store in airtight container, and store in refrigerator.

Helpful Hints:

Homemade catsup, loaded with flavor, but no sugar. A great alternative for diabetics or calorie counters.
