Sugarless Apple Pie (Diabetic)

Ingredients:

1 can, 12 ounces, frozen concentrated apple juice
1 tablespoon plus 1 teaspoon cornstarch
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 to 1/2 cup Splenda sugar substitute, optional
5 or 6 large Golden Delicious Apples, 6 to 7 cups
2 tablespoons butter or margarine
Pastry for a 2 crust pie, if you are making conventional pie
Sugar free ice-cream or frozen yogurt, if desired


Method:

Step 1. Remove both ends of the apple juice can and press the frozen apple juice into a 3 quart microwave safe dish. Defrost uncovered in the microwave
oven, until just thawed, not warm.
Step 2. Whisk the cornstarch, cinnamon and nutmeg into the apple juice until smooth. Allow to stand while preparing the apples.
Step 3. Peel, core and slice the apples. For more nutrition, just wash, core and slice the apples.
Step 4. Add the butter and the sliced apples to the juice mixture.
Step 5. Cover and microwave 8 minutes, stirring once or twice.
Step 6. Remove the cover and cook an additional 8 minutes, stirring occasionally. The apples should be tender when pierced with a knife.
Step 7. Remove from the microwave oven and let stand 20 to 30 minutes. Taste to check the sweetness. If apples are fully ripe, you probably won't need
to add the Splenda, but I recommend doing a taste test.
Step 8. Make pastry while apples are cooling.
Step 9. Turn apples into pastry lined pie pan.
Step 10. Dot the top with margarine or butter.
Step 11. Moisten rim of pie crust with water.
Step 12. Cover with top crust and press down to seal.
Step 13. Trim and flute edge. Cut several angular slits in top crust to vent.
Step 14. Cover the edge of the pie with a 3 inch strip of aluminum foil, gently
molding the foil to the edge of the pie to prevent excessive browning.
Remove the foil during the last 15 minutes of baking.
Step 15. Bake at 425 degrees for 15 minutes, then reduce heat to 350 degrees and bake an additional 25 to 35 minutes or until the crust is golden brown
and the juice begins to bubble through the slits in the top crust.
Step 16. Remove the pie from the oven and cool on a wire rack.
Step 17. Serve with ice-cream or frozen yogurt, if desired.
