Sweet Potato Casserole

3 cups mashed sweet potatoes, about 2 lbs.
1/2 cup granulated sugar
2 large eggs, slightly beaten
1/2 cup milk
1/4 cup butter, melted
1/2 tsp salt
1/2 tsp vanilla extract


Preheat oven to 350. Grease a shallow 2-quart casserole dish.
In a medium bowl, stir together
the potatoes, granulated sugar, eggs, milk,
butter, salt & vanilla.
Place this mixture into the prepared casserole dish.
Make the topping (See recipe below).
Sprinkle over the top of the casserole.
Place the casserole on a baking sheet.
Bake, uncovered until heated through & lightly browned,
30 to 35 minutes. Let stand 10 minutes before serving.

1/2 cup packed light brown sugar
1/2 cup chopped walnuts, pecans, and other nuts
1/3 cup all-purpose flour
1/3 cup butter

In a small bowl,
stir together the brown sugar, nuts, & flour.
Sprinkle over the top of the casserole. Dot with butter.
