Thyme Garlic Tomatoes (Air Fryer)

Ingredients:

4 Roma tomatoes
1 tablespoon olive oil
salt and freshly ground black pepper
1 clove garlic, minced
1/2 teaspoon dried thyme

Method:

Pre-heat the air fryer to 390 degrees  F.
Cut the tomatoes in half and scoop out the seeds and any pithy parts with your fingers. Place the tomatoes in a bowl and toss with the olive oil, salt, pepper, garlic and thyme.
Transfer the tomatoes to the air fryer, cut side up. Air-fry for 15 minutes at 390 degrees  F. The edges should just start to brown. Let the tomatoes cool to an edible temperature for a few minutes and then use in pastas, on top of crostini, or as an accompaniment to any poultry, meat or fish.
