Traditional Spaghetti Sauce (Diabetic)

Ingredients:

2 tablespoons olive oil
1 cup chopped onions
1 cup chopped fresh mushrooms
1 1/2 teaspoons minced fresh garlic
1 can (28 ounces) whole tomatoes, undrained, chopped
1 can (6 ounces) tomato paste
1/2 cup dry red wine
1/4 cup chopped fresh parsley
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon Equal? Spoonful*

Method:

1. Heat oil in medium size saucepan over medium heat. Cook and stir onions 2
minutes. Add mushrooms and garlic; cook and stir 2 additional minutes.
2. Stir in remaining ingredients, except Equal?. Heat to simmer, stirring
frequently. Simmer, uncovered, 25 to 30 minutes until thickened, stirring occasionally. Stir in Equal? until dissolved. Serve over hot cooked spaghetti, penne, bow tie or your favorite pasta.

Helpful Hints:

Makes 6 servings.
* May substitute 1 1/2 packets Equal sweetener

Mildly seasoned pasta sauce using canned tomatoes and tomato paste. Fresh
parsley and a hint of vinegar give it a "fresh" taste. Equal eliminates any acid
flavor.
