2 cans of tuna, packed in water, drained
2 tablespoons mayonnaise
1 rib celery, finely chopped
1 tablespoon capers, rinsed and chopped
2 tablespoons bread-and-butter pickles, chopped
6 radishes, sliced or chopped
freshly ground black pepper
8 slices sourdough or ciabatta bread
1 head butter lettuce
1 tomato, sliced
Combine the tuna, mayonnaise, celery, capers, pickles, radishes, salt and pepper in a bowl. Mix well with a fork or spatula.
Toast the bread slices under the broiler or in the air fryer until lightly brown.
Place some butter lettuce and a slice or two of tomato down on four of the slices of toasted bread. Divide the tuna salad between the slices and top with the second piece of toasted bread. Enjoy!
