1 box of strawberry or cherry cake mix
1/3 cup of oil
4 ounces of softened cream cheese
12 ounces of powdered sugar
1 tablespoon of lemon juice
Mix together cake mix, eggs and oil. Using a tablespoon, scoop out 1- to 2-ounce portions onto a greased sheet tray and place in a preheated 350-degree oven. Bake until edges begin to brown. Remove from oven and allow to cool.
In a medium mixing bowl, whip cream cheese, slowly adding powdered sugar and lemon juice until completely combined and icing is fluffy.
Once cake disks have cooled, ice the under side of one disk. Place another disk
with bottom side facing the icing of another disk.
Serve as-is or dip in melted chocolate.
Recipe makes 20-25 cake sandwiches.
