Zucchini Casserole

2 large zucchini
1/2 cup onion chopped
3/4 cup carrots shredded
6 Tablespoons butter
1 can cream chicken soup
2 1/2 cups Stove top stuffing
1/4 cup sour cream


Shred and cook zucchini until tender crisp in salted water. (very little
time required) Saut? 1/2 cup chopped onions and 3/4 cup grated carrots in 2 Tablespoons butter Fold in 1 can of cream chicken soup, 1/4 cup sour cream, and 1 ? cup stove top stuffing. Put in greased pan 9 by 13 inch. Sprinkle 1 ? cup stove top stuffing & 2 Tablespoons melted butter. Bake at 350 degrees for 30 minutes.
