Zucchini Relish

10 cups coarsely chopped zucchini or squash (8 zucchini)
3 green peppers
2 red peppers
3 large onions
1 cup chopped celery
5 tbsp salt
2 ½ cups white vinegar
4 cups sugar
1 tsp nutmeg
1 tbsp mustard seed
1 tsp turmeric
1 tbsp celery seed
½ tsp pepper
2 tbsp cornstarch


grind together all vegetables in food processor.
Sprinkle with salt
Mix well
Let stand over night
Drain vegetables rinse with cold water and drain again
Place in a large pot and add remaining ingredients.
Bring to a boil
Reduce heat and simmer for 20 minutes.
Put into hot jars and seal
Process in boiling water bath for 5 minutes.

Helpful Hints:

Great to add to cooked beans or peas before eating.
Great to use as relish on hot dogs.
Add to mayonnaise to make a great tarder sauce for fish.
Use as a substitute for sweet pickles in potato salad or chicken salad.
