Zucchini crab cakes

Ingredients:

2 ½ cups grated zucchini
1 egg beaten
2 tblsps. melted butter
1 cup seasoned bread crumbs
¼ cup minced onion
1 tablespoon bay seasoning
¼ cup flour
½ cup oil for frying

Method:

drain shredded zucchini in colander and squeeze out water in a towel. You want to end up with 2 ½ cups.
Combine zucchini, butter, egg. Mix well then add remaining ingredients except oil. Mix well. Shape into patties dredge in flour heat oil fry until golden brown. Yields 5 servings.
These can also be made with the yellow summer squash
