Ingredients:

crust
1 1/2 cup oats
1 1/2 cup flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup brown sugar
3/4 cup shortening �

Method:

blend all the crust ingredients together using 2 butter knives until it feels like crumbs
pour all but one cup of the crumbs in to a 13 x 2 pan, press down the crumbs firmly and
make sure some goes up about an inch on all sides.


filling
2 8 oz packs of pitted dates
1 cup water
1/2 cup sugar
1 teaspoon vanilla
chop dates, add to a pot with the water and sugar, cook for about 5 minutes on a low heat, stirring the whole time. let sit for a few minutes. stir in the vanilla
then spread on top of the crust, sprinkle the 1 cup of reserved crumbs on top. bake for 30 minutes. let cool before cutting in to squares.


using the same crust recipe you can make yummy lemon bars as well.
lemon bar filling
1 can sweetened condensed milk
4 large eggs
2/3 cup lemon juice. I used bottled and it came out just fine.
1 tablespoon flour
1 teaspoon baking powder
1/2 teaspoon salt
beat eggs and milk together until well combined, add lemon juice, beat again. add dry ingredients
beat till combined. pour mixture on the prepared crust, recipe above. same size pan.
cook for 20-25 mins. cool for 1 hour in the fridge or 2 hours on the counter top. put powdered sugar in a siffter and sprinkle on top of cooled bar. slice
in to squares and enjoy. makes a bunch, depends on how big you cut them.
